Simply stated, plantains rock…..and so does my brand new Plantains Savory Hempseed Flatbread recipe.
I was never the person who at a ton of bread, flatbreads, or the like. Instead, I grew up on and craved all things cakey-carby-pancakey.
But somewhere along the way, I started wishing that I could just grab a piece of bread ‘n butter coconut oil or have pizza again on a random Friday night.
Just a few short years ago, I would grab pre-mixed, gluten-free flour and explore. The problem always was that it would make me feel horrible.
I now understand why.
So I rarely buy pre-mixed things like that anymore. And no, this doesn’t make me miracle mother; it makes me a practical mother, who is trying to heal while feeding my family the very best in unprocessed as possible.
I have taught myself even more about how to work with vs. against my body. And it’s so delicious. {Not easy, delicious.}
The Savory Hempseed Flatbread recipe has been a work-in-progress for a few months now. In the beginning, I used eggs. But then my doctor said we had to avoid them for awhile (mostly due to the white, not the yolk, but in any case avoiding completely for now). And so the recipe changed. In fact, I think it got an upgraded boost.
Two Components to Vegan Flatbread Greatness
Plantains
This flatbread recipe uses plantains as the main feature. When making a flatbread, you’ll want to use green plantains over ripened plantains.
The ripened plantains are better suited for a recipe like the dessert version of my AIP Bread.
That said, a green plantain is tough to cut, tough to peel. Because you don’t want pieces of plantain popping up in your flatbread, you’ll want to slice and dice the plantain prior to placing it in your food processor/blender for mixing.
Egg Replacement
Because the plantain is so dry and starchy – it’s a resistant starch – (+ the fact that coconut flour is used), we still need that egg-like, wet offset.
Enter: chia seed + flaxseed + water which = a gel-like substance replacement.
I worked with this awhile to figure out the right portions, but alas, I did it.
When this was all said and done (it took probably 10+ times to perfect), I had myself a new bread – flatbread.
It is dairy free, gluten free, grain free, low FODMAP, vegan, soy free, corn free and sugar free.
Baby likes it. Ryan likes it. And yesterday when my sitter was over, she couldn’t stop eating it, making note, “awesome with that coconut oil.” I’d agree.
Plantain Savory Hempseed Flatbread Recipe

- 1½ Green Plantains, cut into small pieces (approximately 1.5 cups)
- 2 tbsp Nutiva Organic Hempseed
- 1 tbsp Flaxseed + 3 tbsp water
- 1 tbsp Nutiva Organic Chia Seed + 3 Tbsp. water
- 1½ tbsp Nutiva Organic Coconut Flour
- 2 tbsp Nutiva Organic Coconut Oil, (measured then melted)
- 1 tsp Turmeric
- 1 tbsp Basil
- ¾ tsp Sea Salt
- Preheat oven to 400°F.
- Gather and measure all ingredients.
- Line a 9×12 pan with parchment paper. (Cut the parchment paper so it fits the pan almost exactly. This will make it easier to spread the flatbread batter to the edges, and then to peel off once baked.)
- Place chia seeds, flaxseeds and water into a small dish. Stir, and set aside, allowing it to “gel” for at least 5 minutes.
- Place plantain pieces, hempseed, coconut flour, turmeric, basil and sea salt in a blender or food processor.
- Add in the chia seed and flaxseed mixture.
- Blend mixture until it reaches a smooth consistency, scraping down the sides about halfway through (you don’t want any large pieces of plantain).
- Spread mixture onto the parchment paper, covering the pan until it’s smooth and even.
- Bake on the second shelf of the oven for 17 minutes.
- Serve immediately.

Sounds like me…I haven’t had bread for so long as the gf store bought ones don’t sit well in my tummy. Can’t wait to try this.
Could you let me know though if I can substitute firstly, the chia seeds with something else. I’m fine with egg and yoghurt.
Secondly, I can’t get hemp seeds where I live in India. Can I just omit them, as I try to avoid seeds anyway.
