I wish I could tell you just how delicious my holiday-inspired peppermint fat bombs are.
But it’s not fully necessary because these are so easy to make that you’ll see for yourself soon.
Simple Recipes
Was thinking about recipes and various ideas this past week while filming recipe videos with Clean Eating Magazine.
Sure, everyone loves the feeling of accomplishment when they make a super complex recipe.
Feels good to sit down, enjoy said recipe, and know that you created such a masterpiece.
But if there’s one thing I’ve learned about food and recipes while on my own journey and helping thousands of you, it’s this:
Minimal, simple ingredients and instructions always wins.
Honestly.

Peppermint Fat Bombs {Holiday-Inspired}

The reason I love these so much is because they are green, a natural green, and full of peppermint which we all know is delicious (plus acts as a digestive aid).

2 cups Organic Coconut Butter
I still love the Nutiva Organic Coconut Manna most. Coconut Manna is just coconut butter, so whatever you have access to will work.

1/8 cup Organic MCT Oil
Boost with some MCT’s (medium chain triglycerides). I’m a huge fan of Perfect Supplements quality. Their MCT oil HERE comes in a glass container, too. (Use my code GUTSY10 to save 10%.)

1 Tablespoon peppermint extract
I really love THIS peppermint extract. It’s pure and very high-quality. However, if you already have your essential oils for gut health, you could also swap in the Peppermint Essential Oil for this peppermint extract. You choose.

2 teaspoons monk fruit
Now, I realize that not everyone wants to use Lakanto’s monk fruit, as I do. That’s okay. If you don’t want to use monk fruit, you could choose any other nonnutritive sweetener desired. And if you don’t care if these are “Keto,” then you could also swap out the nonnutritive sweetener for the sweetener of choice.

2 packets ColorKitchen Natural Green Food Color
Just grab TWO of THESE. Cool bonus with this is that, if desired, you can mix the sprinkles right into the “batter” for an even prettier holiday effect!

Himalayan salt, a couple pinches
Just a couple pinches is all you need. If you enjoy more salt, then at the end, prior to eating, sprinkle a flake or two over your individual portion. You know, kind of like Sea Salted Caramel.
Alright, if you’re ready to make this, let’s go!
- 2 cups Organic Coconut Butter
- ⅛ cup Organic MCT Oil
- 1 Tablespoon peppermint extract
- 2 teaspoons monk fruit
- 2 packets ColorKitchen Natural Green Food Color
- Himalayan salt, a couple pinches
- Line a muffin tin with 12 cupcake liners, and set the tin aside.
- Measure then melt coconut butter via any method preferred.
- Place coconut butter, MCT Oil, peppermint extract, monk fruit, and salt in a small bowl and stir by hand until all pieces are completely blended together.
- Little-by-little, add in the green food coloring until shade of green desired appears.
- Pour mixture evenly into the 12 cupcake liners.
- Place in freezer for at least 30 minutes.
- Remove, and enjoy.
