What I want many mornings is a gigantic bowl of bone broth and a couple Baked Breakfast Turkey Patties.

I realize this sounds crazy.

What? You don’t want cereal and milk or pancakes soaked in butter and syrup?

Don’t get me wrong. Those are delicious, and I do have them from time-to-time. But if I’m being honest – it’s just dessert. Yes, dessert for breakfast. And if that’s what you want, go for it.

Breakfast Around the World

But most places in the world do not consider that for breakfast, if at all.

  1. In Columbia, they eat Changua, which is a hearty soup made with water, milk and potatoes that’s typically served with an egg on top.
  2. Gallo Pinto is what’s for breakfast in Costa Rica. It is a combination of rice and beans that are first cooked separately and then fried together, seasoned with cilantro and often served with fried eggs and plantains.
  3. The Egyptians enjoy a fava bean stew breakfast that some have suggested dates back to ancient Egyptian times.
  4. In Japan, they start the day with soup, rice, and fish.

While there are many countries that enjoy pastries (ahem – Italy! – and it’s awesome), the amount of people worldwide who do daily breakfast meals that look similar to that of American’s breakfast is not nearly what one expects.

Turkey Sausage Patties

So even though it seems strange that I could love a big bowl of bone broth and turkey patties, this is fairly “normal” on a worldwide scale.

It used to make me feel like an outsider. But let me tell you – when that was the way I started my days, they seemed far better off than when I eat the “American breakfast” way.

So maybe you’re interested in shaking up your own breakfast.

These baked turkey sausage patties might be the perfect segue.

Turkey Burgers in Oven

And even better yet? These are simple to make, and you can pre-make them the night before so they are a simple breakfast on-the-go.

That’s right, you’ll prepare your turkey burgers, then slide them into the oven to bake.

There are a couple ways to do it.

  1. You could form your turkey burgers into small patties, set on a baking sheet and bake or…..
  2. Use a formed pan (like this mini brownie one I have), and bake them in it so your patties are perfectly formed in whatever shape you desire. You didn’t think a brownie pan was only for brownies, did you?!

How to Season Ground Turkey

In order to make these breakfast turkey patties come alive, you won’t need many things.

In fact, you only need 5 main ingredients: an organic, free range egg, 1 pound ground Kosher turkey, 1 whole zucchini, fresh rosemary and fresh thyme.

That’s right, when thinking about how to season ground turkey, I always find that the simpler I keep it, the better it tastes.

A little salt, fresh pepper (not used in this recipe, though, but you can add it), and a spice or herb or two.

And boom! Flavor-filled ground turkey.

Here’s how….

Preheat the oven to 375 degrees.

Brush the mini brownie pan with Avocado Oil spray (or oil of your choice).

Peel and de-seed the zucchini and cut into a few pieces lengthwise.

Shred the zucchini in a food processor.

Note: Why zucchini? Well did you know that mashed zucchini can take the place of eggs in many recipes? I’ve never found it to be super effective, but I like to do it in recipes like this where I have a little egg (i.e. one) – and where adding zucchini would be an added recipe benefit.

Once the zucchini has been shredded, place all your ingredients in a bowl and mix together by hand.

Form the meat into “brownie patties,” and place the pan in the oven to bake for about 42 minutes.
