I can’t even tell you how good these 4 Ingredient Mini Breakfast Poppers are.
Many of my recipes from here on out will be:
- gluten free
- grain free
- dairy free (again, unless it’s raw dairy and I will make a clear note of it)
- corn free
- soy free
- preservative and additive free
Now that we have that clear, let’s talk about a puffy, delicious and easy breakfast option.
When it comes to meat, I tend to prefer just the plain ‘ole stuff that I can dress up on my own. But I do like Aidells chicken and apple sausages. I’ll tell you why: they don’t use hormones, gluten or msg.
But I do remove the casing.
This might seem odd to you, but I don’t think my body likes to attempt digesting it. The casing’s purpose is to hold the sausage in place. For these muffins, I couldn’t care less about that.
You need only three more ingredients, and if you’re like me, you probably have them at home this second.
What you might not have is the “mini popper pan.”
It’s a pan LIKE THIS. And like every other kitchen necessity item I buy, rarely do I buy it for its intended purpose. {But I have made Cake Pops with it, so I’m hoping that my husband will read this and think, “Yeah, she really does need a billion things for the kitchen.”}
I digress.
Too much chatter….our mini poppers are done.
I had spillage because I got too excited and filled them pretty high. You’ll only want to fill about halfway. Or better yet, fill ’em up and do like me –> eat all the spillage immediately 🙂
4 Ingredient Mini Breakfast Poppers

- 5 eggs, organic and free range
- 3 Aidells chicken & apple sausages, de-skinned (if you don't want the casing like me) and sliced into small pieces
- ⅔ tsp. baking soda
- ⅓ c. + 1.5 tbsp. almond meal
- sea salt, pinch (okay, I realize this is the 5th ingredient, but you don't need it - I did!)
- Preheat the oven to 375 degrees
- Beat all ingredients together by hand
- Pour mixture into the pan
- Bake for approximately 12 minutes

Hey Ashley! You definitely don’t *need* one, so just use a mini muffin pan or a muffin pan in general:)

Great recipe. I’m totally into recipes that have a small ingredient list. Hard to get much smaller than 4! And being that if I’m going to spend time making a nice breakfast like this, I’m going to feast a little, I’m more likely to make mine cupcake size.
