Simple 4-Ingredient Mini Breakfast Poppers. Perfect for breakfast or snack. Gluten, grain, dairy, soy, corn, sugar-free, and Paleo.
Ingredients
  • 5 eggs, organic and free range
  • 3 Aidells chicken & apple sausages, de-skinned (if you don't want the casing like me) and sliced into small pieces
  • ⅔ tsp. baking soda
  • ⅓ c. + 1.5 tbsp. almond meal
  • sea salt, pinch (okay, I realize this is the 5th ingredient, but you don't need it - I did!)
Instructions
  1. Preheat the oven to 375 degrees
  2. Beat all ingredients together by hand
  3. Pour mixture into the pan
  4. Bake for approximately 12 minutes
Notes
Not only is this breakfast, but it also makes an awesome on-the-go snack. My recipe made about 20 mini poppers. You can get as creative as you want with other herbs and spices.
