Did you ever think you could get a gluten-free dinner on less than 5 dollars? I can’t *fully* take credit on this one, as much of it came from my mother while I was in Minnesota. But I made my own version of it as soon as I got back to California, and I just had to share it with all of you.

Gluten-Free Dinner on less than $5

Ingredients
  • 2 x Fresh Express 3 Color Cole Slaw ($1.29/bag)
  • Boneless, skinless chicken breast (we used 3 breasts for the 2 bags of cole slaw)
  • Olive Oil
  • Sea Salt & Pepper
Instructions
  1. Saute cole slaw in olive oil, cooking on low until it reaches the texture of your liking.
  2. Bake or grill the chicken (we grilled it).
  3. Dice chicken, and add it to the cole slaw.
  4. Top with Sea Salt and Pepper.

This will make several servings, depending on who is eating it. Since my husband loved it, he ate a lot and the dish dwindled quickly! 

For one person, you could do one chicken breast and half the bag, making the meal for under $5. Using 2 bags of cole slaw and 3 chicken breasts will probably be enough for a family of four – and still less than or around $5!

    Here’s a question how do you feel about products that have always been GF but suddenly changes their labeling to make it seem like they are new?

    1. Mikel – AWESOME question. One that I feel needs an entire blog post around, as I have been thinking about this so much lately. I have a favorite Kettle Corn I eat, and they market themselves now as “gluten free,” which is really funny to me because I’m all, “Wait….Kettle Corn is naturally gluten free” (as long as it’s just the corn, sugar, salt & oil). So your point is absolutely legit! It’s Marketing, and as a marketer myself, I get it. Marketers have identified a huge opportunity right now. If their product was always gluten free, might as well make it know, right?! I think it’s fine; it takes the “guessing” out of it for people who are intolerant and/or have Celiac. Being gluten free is a tough way to live life initially. There are so many “rules” to follow and so many things you have to learn. I appreciate a clear, defined label. What may be common sense to you or I when it comes to gluten free, simply isn’t the case for everyone. But still….I have to laugh if on a bag of raw carrots they say, “Gluten Free!” Thanks for stopping by!
