There is no denying that healthy chocolate protein pancakes are hard to find, especially if you need to be gluten, grain, and dairy free.

So I didn’t find them.

Instead, I created these chocolate pancakes using a simple chocolate flavor that gives a huge protein boost.

It makes for a delicious and gut healthy breakfast or even a sweet treat for all those chocolate cravings.

Actually, it’s really the best of both!

6 Pancake (ToPPER) Ideas

  1. maple syrup
  2. fruit toppings like fresh berries, a ripe banana cut up finely, or any other fresh fruit desired
  3. dairy-free chocolate chips
  4. peanut butter
  5. unsweetened cocoa powder
  6. DIY non-dairy chocolate sauce – a chocolate syrup of sorts (melt coconut oil and cacao powder together; that’s it!)

Then, making these healthy pancakes is super simple.

Place all dry ingredients in a mixing bowl. Stir together. Then, add the wet ingredients (the egg and apple cider vinegar) to the mixture and mix together by hand until you reach a desired consistency for your pancakes.

Hint: To make it a little thinner, I did add just a hint of almond milk, but you might not need to. You can add any liquid desired to it, if needed (i.e. water, cashew milk, etc.)

  • Thin consistency = pencil-thin pancakes.
  • Thicker consistency = thicker texture of the pancakes.

Note: if you will be adding the probiotic and cinnamon, now is the time to add that into the main ingredients as well.

Once the pancake batter is ready, then you just need to fry it over the stove.

In a small pan, place about 1/2 tablespoon olive, coconut, or avocado oil over medium heat.

Once melted, pour the pancake mix onto the pan (alternatively you can use a pancake griddle).

Flip the pancake over once it starts to bubble. Finish cooking, them remove from heat.

All that’s left to do is top with anything desired and enjoy this delicious healthy recipe.

p.s. Just one pancake contains almost 30 grams of protein.

Now, here are some more thoughts notes, and information for the Gutsy ones:

  1. Not only is this a great way to make an easy breakfast, but it’s also made complete with healing elements like the collagen and apple cider vinegar. Learn more about each of them:
    1. collagen
    2. apple cider vinegar
  2. I love chocolate protein powder pancakes like these, but you might not. If so, you can still get in a high amount of protein through collagen. Simply either use 2 scoops of plain collagen or you could choose something like an Elderberry flavor (HERE).
  3. Cinnamon is great for curing that sweet tooth while still normalizing blood sugar without incorporating actual sugar. Try it and see!
  4. Can you use something other than coconut flour? Absolutely. But if you still want it to be gluten, grain and dairy free, then choose: almond flour or tiger nut flour. If you don’t care if it’s grain free or not, then choose an organic, gluten-free all purpose baking flour or oat flour.
  5. Can’t do the egg? That’s okay if you don’t use coconut flour. With coconut flour, you will need an egg. An egg replacement can be mashed banana, unsweetened applesauce, or even chia seed with water.
