This Chicken Lettuce Wraps with Creamy Honey-Lemon Dressing recipe comes from my new book – a spin-off of generic paleo lettuce wraps recipe.
These are not your average butter lettuce wraps.
The delicious filling is plump-full with flavor, and I chose to use pineapples as a game changer for both their sweetness and naturally-occurring digestive enzymes.
By the way, if you’d rather use a whole pineapple and cut it yourself, go for it!

Paleo Lettuce Wraps Recipe
Here are all the ingredients you’ll need for this easy weeknight dinner.
These ingredients make for a flavorful meal, but if you want several ideas for how to change it up a bit and/or swap, you’ll find them at the bottom of this article.
Sauce ingredients / dressing:
- 6 large egg yolks
- juice of 1 lemon
- 1/2 cup full-fat coconut milk
- 1/4 cup olive oil
- 2 tablespoons honey
- 1/2 teaspoon salt
Lettuce wraps / chicken mixture:
- 6 tablespoons olive oil, divided
- 1 (12-ounce) bag broccoli florets, chopped (about 4 cups)
- 2 cups chopped, ground chicken or shredded cooked chicken
- 1 (20-ounce) can pineapple, drained (about 2 1/2 cups)
- 1 cup shredded carrot
- salt
- freshly ground black pepper
- 4 large romaine lettuce leaves

These healthy chicken lettuce wraps are gluten-free, dairy-free, and can be made in under 30 minutes.
Chicken Lettuce Wraps with Creamy Honey-Lemon Dressing
Ingredients
- 6 egg yolks large
- 1 lemon juice of
- 1/2 cup coconut milk full fat
- 1/4 cup olive oil
- 2 Tbsp honey
- 1/2 tsp salt
Lettuce Wraps
- 6 Tbsp olive oil divided
- 4 cups broccoli florets chopped
- 2 cups chicken ground, chopped or shredded
- 2.5 cups can pineapple chunks drained
- 1 cup carrot shredded
- salt to taste
- ground pepper to taste
- 4 large Romaine lettuce leaves
Instructions
- In a blender, combine the egg yolks, lemon juice, coconut milk, oil, honey, and salt. Blend until smooth. (Alternatively, you can whisk the ingredients together in a bowl.)
Lettuce Wraps
- In a large wok or skillet, heat 3 tablespoons of oil over medium-high heat.
- Add the broccoli and cook, stirring occasionally, until the broccoli has slightly browned, for about 10 minutes.
- Add the remaining 3 tablespoons of oil, then the chicken, pineapple, and carrot. Season with salt and pepper.
- Reduce heat to medium, and cook until the pineapple is soft, 5 to 7 minutes. Remove from the heat.
- Spread ⅓ to ½ cup of the mixture evenly onto each lettuce leaf. Drizzle with dressing, and roll up the wraps.
Notes
Swaps
For most, especially if you are just beginning your leaky gut healing journey, you won’t need to make any swaps to this recipe.
But for some, you might.
I don’t know you or your current circumstances, but here are various other things you could do with this recipe:
- Do you want to make it Vegetarian? Cut the chicken out.
- Don’t like chicken? Use ground turkey, ground pork or ground beef instead.
- Love onions? Try adding in some green onions (by the way, scallions are low-FODMAP, too!)
- Can’t do honey because it’s high-FODMAP? Swap with maple syrup.
- If you don’t like olive oil, you can swap in Avocado Oil or Coconut Oil instead.
- In fact, for more of the PF Changs flavor, consider using sesame oil in these healthy lettuce wraps.
- Are you sensitive to broccoli due to SIBO? The broccoli FODMAP breakdown is in REASONABLE SIBO HERE to help with that.
- Not even interested in lettuce for the wrap? You can seek out a paleo-friendly wrap that the whole family will love.
- Add in other things like: green cabbage, red cabbage, water chestnuts, fresh ginger, bell peppers, baby bella mushrooms, and a sprinkle of sesame seeds.
- If you’re not trying to make the lettuce wraps low carb, add in white rice! Or if you do want them to remain low carb, try cauliflower rice.

The best part of knowing the basics for how to make paleo lettuce wraps is that it makes it super easy to try different ways with your own lettuce wraps with whatever flavors you desire.
