Broths are sort of magical. Today I want to give you the Instant Pot Vegetable Broth recipe from my new book.
Two Quick Notes
Now, before we continue on, I need to make two things very clear:
- This recipe can be found on page 52 of The Leaky Gut Meal Plan: 4 Weeks to Detox and Improve Digestive Health. The actual title is, “Vegetable Broth.” The reason I titled this Instant Pot Vegetable broth is because I also share how to make it in the Instant Pot. By the way, the IP I have and used for these recipes is THIS Instant Pot.
- Why Vegetable Broth? I let you guys decide which broth recipe from the book I’d share on A Gutsy Girl. You can see it HERE. If you want the truth, I was shocked that the Vegetable Broth won. And I didn’t want it to be this one because my chicken and beef bone broths are insanely delicious. But this broth won fair and square.

I believe the reason the Vegetable Broth won is because it’s actually fairy hard to make a good vegetable broth.
Too often, people think they can put a few vegetables in a pot with boiling water, leave it for a couple hours and bam – Vegetable Broth.
It doesn’t work like that.
Vegetable Broth is super tricky in that it takes a lot to extract flavor. Listen, if you are Vegan or don’t like bone broth, close your ears. Fat creates flavor. Naturally, then, the bone broths have more initial flavor.
That’s not to say a Vegetable Broth can’t have flavor. It can, does, and I’ve proven it.
After making Vegetable Broth for years now, here is the trick: lots of vegetables and herbs, then water. You’ll need far more veggies and herbs than water, but that’s how you’re going to make this great.
Ingredients
Here are the exact ingredients I use to make mine:
- garlic cloves (5), unpeeled and chopped
- Five carrots, unpeeled and chopped
- celery stalks (5), chopped
- 2 bay leaves
- 1 yellow onion, unpeeled and chopped
- One sweet potato, unpeeled and chopped
- leek (1/2), cut into thirds
- fresh flat-leaf parsley (1/2 bunch), chopped
- 1/2 (3/4-ounce) package fresh rosemary
- 14 cups water
- 1 teaspoon salt
Please don’t misunderstand this to be only 1 teaspoon of salt. Listen, in all of my recipes you’ll barely find any salt. This is because everyone has a preference when it comes to their salty taste buds. I always add salt to each cup or bowl of broth, but at the end, not to the full batch.
The Recipe Card

- 1 sweet potato, unpeeled and chopped

- ½ (3/4-ounce) package fresh rosemary
- 14 cups water
- 1 teaspoon salt
- Combine the garlic, carrots, celery, bay leaves, onion, sweet potato, leek, parsley, cilantro, rosemary, water, and salt in a large soup pot. bring to a boil over medium-high heat, then reduce the heat to a simmer, cover, and cook for 4 hours.
- Strain the broth into another pot or a storage container, an discard the solids. Season with salt.
If you have an 8-quart multi-cooker (Instant Pot), you can really speed up this process. Combine all the ingredients in the pot, cover, and seal. Using the “Manual” function, cook on High for 30 minutes. Leave the broth to sit for 1½ – 2 hours. Strain the broth into another pot or a storage container, and discard the solids. Season with Salt.

Instructions for Instant Pot Vegetable Broth
If you have an 8-quart multi-cooker (Instant Pot), you can really speed up this process. Combine all the ingredients in the pot, cover, and seal. Using the “Manual” function, cook on High for 30 minutes. Leave the broth to sit for 1 1/2 – 2 hours. Strain the broth into another pot or a storage container, and discard the solids. Season with Salt.
But What About the Bone Broth?
What about it? If you want my very honest opinion, when it comes to healing the gut, it’s bone broth – not vegetable broth – that is far more impactful.
That said, there is absolutely a time and place, rhyme or reason for vegetable-based broth, too.

What to Eat with Vegetable Broth

30 of the 75 recipes are Vegan. Many more are Vegetarian.
At the same time, probably all of them could be classified “Paleo.”
If I had to nail down any certain “diet” the book could fall under, it would likely be something along the lines of Dr. Mark Hyman’s “Pegan” diet. Yes, that would be Paleo meets Vegan.
However, the goal of healing a leaky gut is simply to choose as many anti-inflammatory foods as possible while also paying attention to the lifestyle factors going on in your life.
These days, even the term “anti-inflammatory” is subjective.
