Pumpkin Apple Soup

A simple soup inspired by Thanksgiving with fresh pumpkin and apple to start off you meal.

Ingredients
  

  • 1 Tbsp olive oil
  • 1 tsp ginger grated
  • 1 onion small, minced
  • 3 cups pureed pumpkin fresh or canned
  • 1 apple small, chopped
  • 3 cups vegetable or chicken broth purchased or homemade
  • 1 tsp cinnamon ground

Instructions
 

  • Cover bottom of a heavy pan with olive oil. Add the ginger and onion
  • Sauté for 3 minutes until browned
  • Add the pumpkin and apple, and cook 2 to 3 minutes
  • Pour in the stock
  • Cover and simmer for 20 minutes until the pumpkin and apple are soft
  • Add cinnamon
  • Transfer ingredients to a blender and process until smooth
  • Serve in bowls and top with extra cinnamon, if desired

Notes

To make it “creamier” go ahead and add either coconut milk or almond milk.
