Of all the excuses people make for not eating breakfast, the top 3 I hear are,
- “I don’t have time.”
- “I’m not hungry when I wake up.”
- “I’m saving my calories for later in the day.”
I understand the thinking behind all of them. But we need to reverse this thinking, and get breakfast back into our daily lives. Make a little extra time, eat a little even if you’re not hungry and by all means -> “SAVING” those calories for later really just means a slow morning metabolism and a binge session later (both of which, by the way, could be prohibiting you from losing those last few pounds).
Many of you have asked for my Gluten-Free Pumpkin Oatmeal Recipe. I thought today would be the perfect day to share it with you!
- 1/2 c. gluten-free rolled oats
- 1/2 c. almond milk
- pumpkin mixture:
- 1/2 c. pureed pumpkin
- 1/2 pack stevia
- pinch nutmeg
- pinch cinnamon
- pinch xanthan gum
- 1/4 c. almond milk
- 1/4 c. greek yogurt
- Bring 1/2 c. water + 1/2 c. almond milk to boil
- Add in the oats, reduce heat to simmer and let sit for 13-15 minutes
- Add in the pumpkin mixture and let sit for 1-2 minutes
- Serve with 1/4 c. greek yogurt on top (as well as any additional cinnamon/nutmeg as desired)
No excuses tomorrow to not eat breakfast. This recipe is simple, saving you time. It’s delicious and will make you crave the sweet, savory taste of breakfast. And it’s the perfect amount of calories to get your day off right; metabolism pumped, while still having plenty of calories left for the rest of the day!
