A sweet citrus salad that is likely to pique your taste buds’ interest. The crunchiness of celery and raw almonds creates a texture you’ll love.
Ingredients
Dressing
  • ¼ cup olive oil
  • 2 tablespoons coconut sugar
  • 2 tablespoons white balsamic vinegar
  • ½ teaspoon salt
  • pinch freshly ground black pepper
Salad
  • 1 (5-ounce) bag baby spinach
  • 2 scallions, chopped
  • 1 (15-ounce) can mandarin oranges, drained
  • 2 celery stalks, sliced
  • 1 tablespoon minced fresh flat-leaf parsley
  • ½ cup slivered raw almonds
Instructions
Dressing
  1. In a blender, combine the oil, sugar, vinegar, salt, and pepper. Blend until smooth.
Salad
  1. In a large bowl, combine the spinach, scallions, oranges, celery, parsley, and almonds.
  2. Pour the dressing over the salad, and toss to coat.
Notes
You can swap out the 2 tablespoons coconut sugar in the dressing for 1 to 1½ tablespoons stevia or monk fruit, if desired.
