- ¼ cup olive oil
- 2 tablespoons coconut sugar
- 2 tablespoons white balsamic vinegar
- ½ teaspoon salt
- pinch freshly ground black pepper
- 1 (5-ounce) bag baby spinach
- 2 scallions, chopped
- 1 (15-ounce) can mandarin oranges, drained
- 2 celery stalks, sliced
- 1 tablespoon minced fresh flat-leaf parsley
- ½ cup slivered raw almonds
- In a blender, combine the oil, sugar, vinegar, salt, and pepper. Blend until smooth.
- In a large bowl, combine the spinach, scallions, oranges, celery, parsley, and almonds.
- Pour the dressing over the salad, and toss to coat.
You can swap out the 2 tablespoons coconut sugar in the dressing for 1 to 1½ tablespoons stevia or monk fruit, if desired.
