2-Ingredient Probiotic Coconut Yogurt

Cultured yogurt is filled with beneficial probiotics. Using full-fat coconut milk to make this yogurt ensures that it is also dairy-free (as long as the probiotic is vegan).
Ingredients
  • 1 (13½ – ounce) can full-fat coconut milk
  • 2 probiotic capsules
Instructions
  1. Pour the coconut milk into a jar.
  2. Using a wooden or ceramic spoon (do not use a metal spoon), stir the coconut milk until smooth.
  3. Open the probiotic capsules, pour the powder into the jar, and stir it in with the same spoon.
  4. Cover the jar with a piece of cheesecloth, and secure it with a rubber band.
  5. Leave the jar on the counter but out of direct sunlight for 24 to 48 hours (depending on how warm your house is), tasting occasionally.
  6. Once the yogurt has a tangy flavor, remove the cheesecloth, and cover the jar with a lid.
  7. Put the yogurt in the refrigerator for a couple of hours to thicken and firm. Keep refrigerated, and consume with a couple of days.
