Gluten Free Breaded Baked Chicken

Ingredients
  • 2 organic chicken breasts
  • Attune Foods - Erewhon Corn Flakes Cereal
  • 2 Tbsp almond meal flour
  • ½ cup Elmhurst Unsweetened Almond Milk
  • cinnamon, as desired
  • cayenne pepper, as desired
Instructions
  1. Pre-heat the oven to 425 degrees.
  2. Mix together milk and almond meal flour.
  3. Roll chicken breasts in mixture.
  4. Set chicken on baking pan and coat with a thin layer of cornflakes, followed by your "flavor" of cinnamon, cayenne (or other) if you'd like.
  5. Then, top with more cornflakes and finally, top with a little more of whatever flavoring you chose.
  6. Bake for about 30-35 minutes, or until fully cooked through.

    Susan,

    Perhaps someone could explain to me the gluten free goal? I am not sure why people don’t want glutens?

      The reason I have to go gluten free is because I have celiac disease. I was just recently diagnosed after being deathly ill for 6 months. Im severely malnourished weighing in at only 88lbs. Very Pathetic! But I’m on my way to a speedy recovery being gluten free.

    There are MULTIPLE reasons why someone would choose not to consume gluten! Here is why I don’t (http://agutsygirl.com/my-story/) & (http://bit.ly/klrgvV). Most people do it for medical reasons. Others do it as a means of diet, which typically just turns “fad diet.”
